Fermentation is an ancient, time-honoured method for leavening bread, passed down through generations.
Our sourdough-based breads begin with our original sourdough starter, that we've been nurturing for over 30 years - we call her "mother". From there, each loaf goes through a natural 3-day fermentation process. During these three days our "mother" gets busy adding just the right amount of sourdough tang and oodles of nutritional goodness to every loaf!
This multi-day process takes a little longer, but the result is bread with exceptional flavour, texture, and nutritional value. For bread this good, it's worth the wait.
