*This recipe makes enough for about two sandwiches.
INGREDIENTS:
4 slices of Terra Breads Cheese Loaf
1 large shallot, finely chopped
1/4 tsp finely grated lemon zest
1 cup fresh lemon juice
1 small garlic clove, divided
15.5oz can of chickpeas, rinsed
1 celery stalk, finely chopped
1/4 cup chopped cilantro
4 tbsp extra-virgin olive oil, plus more for drizzling
Pinch of salt
2 cups plain Greek yogurt
2 tsp harissa paste
INSTRUCTIONS:
Smashed Chickpeas:

Combine shallot, lemon zest, and lemon juice in a large bowl. Finely grate 1 garlic clove into bowl, then toss to combine. Let sit for 5 minutes.

Add chickpeas to shallot mixture and smash with a potato masher or wooden spoon until some of the chickpeas are broken into smaller pieces. Add chopped celery, chopped cilantro, and 1/4 cup of olive oil and toss to combine. Season with salt.

Toast your bread slices and rub one side of each slice with remaining garlic clove; drizzle with oil and season with salt.
Assemble sandwiches:

For each sandwich, spread yogurt over one piece of toast and spoon 1 tsp of harissa on top. Using a small spoon, swirl harissa into yogurt to incorporate slightly and marble.

Add chickpea mixture to the same slice of toast, than add finish the sandwich with the second slice.
